Tomato and Avocado Toast

Today I am lounging in my back yard, basking in the sun with a good book (and my research project that I should really be doing rather than reading When God Was A Rabbit).  So for lunch I wanted only to step back in doors for a few minutes, so I whipped up one of my favorites Tomato Avocado Toast.

Whole Wheat Avocado and Tomato Toast

Makes 4

Ingredients

·      4 pieces of whole wheat bread

·      1 tbsp of Dijon mustard

·      1 avocado

·      1 tomato

·      a dash of basil

Directions

1.     Toast each piece of bread.

2.     Cover each slice of bread with Dijon mustard.

3.     Mash up the avocado, and spread on top of the mustard on each slice of bread.

4.     Slice the tomato into ¼ inch thick rounds, and top the avocado with two slices of tomato.
